Is it possible I've never posted this recipe? It's hard for me to believe I've neglected to share this staple breakfast favorite.
2 c. flour (I use a mix of all-purpose and wheat)
1/2 c. sugar
3 tsp. baking powder
1/2 tsp. salt
3/4 c. milk
1/3 c. oil (I use coconut oil or applesauce)
1 c. chocolate chips
Preheat oven to 375 degrees.
Mix all dry ingredients except chocolate chips. Add wet ingredients and stir just until dry ingredients are moistened. Stir in chocolate chips. Fill greased or lined muffin cups 2/3 full.
Bake 15-18 minutes until lightly browned or toothpick comes out clean. Makes 12.
These freeze well, and I always make a double batch as the first dozen disappear in a day.
