Snickers Cheesecake




This is my "for special occasions only" dessert.  We have to make sure we have guests around to help us eat it, or we'd have problems fitting into our jeans the next day.  It's a little bit of work, but oh, so very worth it.

Ingredients:

3 tablespoons butter, melted
1 1/4 cups crushed Oreos (about 20 cookies)
3 (8 ounce) packages cream cheese
3 eggs
3/4 cup white sugar
2 teaspoons vanilla extract
4 reg. size Snickers bars, sliced

*For a thicker cheesecake add an additional egg and 8 ounce cream cheese. This is how I made the cheesecake pictured above.

Directions:

Preheat oven to 350 degrees.

In a small bowl, combine the melted butter and crushed Oreos. Press into the bottom of a 9 inch springform pan.

In a large bowl, cream the sugar and cream cheese together until smooth. Add eggs and vanilla blending well. Fold in chopped candy bar, and pour into crust.

Bake at 350 degrees for 45 minutes. Let cool for 30 minutes and carefully remove the springform pan.   Cool completely before topping.

Topping:
1/4 c. chocolate sauce
1/4 c. caramel sauce
1/4 c. chopped peanuts

I have started making my own sauces (more on that later), but you can buy hot fudge and caramel sauces used to top ice cream.

Because I was rushing to get the cake cool I got some cracks in the top of my cheesecake.  One way to prevent cracks is to turn off the oven as soon as the center begins to look set like pudding and allow the cheesecake to finish baking as the temperature drops.
