These garlicky tomatoes on toast, sometimes called "lazy bruschetta" around here, are a summer staple. With the garden still spitting out tomatoes this appetizer sometimes turns main dish. A tube of toothpaste is often dessert :)
I'm still working on a well-rounded list of Weight Watchers Plus Points recipes for a restart of the program. I went into this spring not knowing the program had been revised and felt frustrated trying to find foods I enjoyed eating. I'll be starting again this fall... this time armed with some favorite foods modified to fit the plan. In the meantime, trying out healthier recipes can't hurt, right?
Ingredients:
- 6 Roma tomatoes
- 1 clove of garlic
- fresh basil
- thinly sliced french bread
- olive oil
- garlic powder (if desired)
Brush thinly sliced french bread with olive and sprinkle with a little garlic powder (we like garlic, and two of the kids like the bread minus the tomatoes). Toast for 4-5 minutes until crisp in a toaster oven or oven preheated to 450 degrees.
Top toast with seasoned tomatoes to serve. If you don't mind an extra step you can sprinkle the tomato topped bread with some mozzarella and return to the oven until melted.
Weight Watcher points will depend on the bread you use and how thin you slice it. I substitute oil olive cooking spray (0 points) and slice my bread thin to make these just 2 Plus Points per slice. The tomato topping is Plus Points free, so heap it on!
