Chicken Week in Review

I had a suspicion that Chicken Week would make for some frugal meals when I learned how to break down a bone-in split chicken breast.  So here's my cost break down for this week's meals. 

Monday: Chicken in Garlic Herb Sauce over Penne $1.57 (excluding chicken)

Penne   .69
Sauce   .88
Veggies free with coupon

Tuesday: Chicken Gravy over Biscuits $3.33 (excluding chicken)

Biscuits  .96 (10 large, we had two left over for breakfast the next morning)
Gravy .20 (or less, stock was included in price of chicken)
Potatoes 1.50
Broccoli, frozen  .67 (with coupon)

Wednesday: Chicken Fajitas $3.64 (excluding chicken)

Lettuce .75
Wraps .65
Other toppings approximately 1.00
Fruit 1.24

Thursday: Caesar Salad with Grilled Chicken $3.76 (excluding chicken)

Lettuce 1.50
Croutons, cucumber etc. .75
Dressing (entire recipe with more than 3/4 left over) $1.10
Garlic Knots .41 (No kidding!  My entire recipe makes 32 rolls for 1.64.)

Friday: Batter-Dipped Chicken Sandwiches 2.99 (excluding chicken)

Batter  .40

Toppings  .50
Sweet Potato Fries  1.10

All these recipes exclude the cost of the chicken which was $6.32.  I still have 1 1/2 cups of shredded chicken and 7 cups of chicken stock in the freezer.  We also had enough leftover each night for one or two lunches the next day (until Chicken Sandwich night).  My total for five nights of meals and chicken leftovers in the freezer was just $21.61.  That's a great success in my book!
