This is a super simple summer treat that I keep on hand for the random dessert or treats for the neighborhood kids.
1 cup softened butter
1 1/2 cups packed brown sugar
2 tsp. vanilla
1 tablespoon water
2 cups all purpose flour
6 ounces mini chocolate chips
Cream together butter, brown sugar, vanilla and water. Blend in flour to form a stiff batter. Stir in chocolate chips. Scoop (or form one inch balls) onto a parchment lined cookie sheets freeze completely. One frozen store in an air tight container or freezer bag.
We like ours frozen, but you can also keep these refrigerated. Notice there are no eggs making these safe to eat unbaked. The girls also like these chopped up on a bowl of ice cream. It's not unusual for me to double this recipe... it's a very popular treat!

that is such a good idea!! I need an online recipe folder for all the things i find i want to try! you know, you could even dip them in chocolate and then freeze. don't they have something like that at the movie theater for like 5 dollars for a box of 5??
ReplyDeleteGeorgia, I actually dip them into chocolate and refrigerate or freeze occasionally. I make boxes of them for my girls teachers and some friends at Valentine's Day.

ReplyDeleteI love the name of your blog! This is just outrageous to be able to take out frozen cookie dough....sans the eggs...out of your freezer anytime you want! Yuuuuummmmy! I think it would be great to have these on hand to throw in ice cream too! Joni
