Grilling: Hashbrown Potatoes

Do you remember when I told you how much I love me some Roasted Red Potatoes? Well, let me tell you about my new love...



It's pretty much the same recipe, but in order to avoid my house feeling like a sauna I needed to find a new way to get my fix.

First, I scrubbed 10 red potatoes, poked them with a fork, and laid them in a pyrex bowl.  I microwaved them until they were cooked and then diced them (when they were cool enough to touch).  After tossing them in the seasoning below, we took them out to the grill to crisp in the cast iron skillet along with a small diced onion.  Talk about potato perfection!

Hashbrown Potato Seasoning:
1 TBSP. garlic salt
2 tsp. thyme
2 tsp. italian seasoning
1/4 c. olive oil
 
Let me just tell you, it's been about hot enough to grill them right on the pavement... however, I don't like gravel in my potatoes.

  2. Here in MI, we don't have that many days that are too, too hot that I can't cook indoors. But, when it does happen, I opt for raw fruits and veggies, and some grilled meat.
