Cucumber Salad


When the weather gets hot all my side dishes get cold!  This recipe is new to me, but I think I could eat it all summer without complaint.  It also fits beautifully into the budget when made from cukes fresh from the garden.  Besides, a girl can only eat so many potatoes.

1/2 c. white vinegar
1/4 c. water
3/4 c. white sugar
1 TBSP celery seed

2 large cucumbers thinly sliced
1 small onion finely chopped

Combine first four ingredients and toss with cucumber and onion.  Refrigerate for at least 2 hours before serving.  You'll want to serve with a slotted spoon.  If you have dressing left over just add some more cucumber slices.
